Eating House Burger
The ultimate burger for a summer cookout!
Ingredients
Serves 4-5
Patty
2 # Local Makaweli Ground Beef
7 oz. Ground Wild Boar
4 oz. Ground Portuguese Sausage
Salt to taste
Pepper to taste
Combine all the meats using a paddle attachment and stand up mixer. Portion into 9 oz. patties. Season with salt and pepper to taste and sear - cooking to desired temperature.
Crispy Tempura Onion Rings
½ cup Tempura Flour (if you don’t have tempura flour, use all-purpose flour and sub cold water for soda water)
Vegetable Oil (for frying)Salt (Season the flour)
Pepper (Season the flour)
4 tbsp. Cold Water (use enough cold water to make a runny pancake batter consistency)
1 Round Onion
Peel onion and cut onion into rings. Dip in batter. Fry until golden brown in a medium sized pot.
Caramelized Onions
1 Round Onion
2 tbsp. Unsalted Butter
Pinch Salt
Peel onion and cut in half. Thinly slice onions lengthwise. Heat unsalted butter in pan over medium heat until melted. Add onions. Cook and stir onions until onions are soft and translucent. Turn down heat and cook until golden brown. Season with a pinch of salt.
Sautéed Mushrooms
Handful Button Mushrooms
1 tbsp. Olive Oil
Pinch Salt
Pinch Black Pepper
Clean and slice button mushrooms. Add olive oil to a pan over medium heat. Cook until golden brown. Reduce heat as needed. Add salt and pepper.
Chipotle Aioli
2 Egg Yolks
1 T. Lemon Juice
1 tsp. Garlic (minced)
¼ tsp. Sugar
½ tsp. Salt
2 T. Chipotle in adobo
¾ cup Vegetable Oil
Using a food processor add egg yolks, lemon juice, garlic, chipotle with adobe sauce and blend. Slowly pour in vegetable oil to emulsify and season with salt and sugar.
Onion Marmalade
2 Red Onions Brunoise (small dice)
3 # Bacon Ground
½ cup Cognac
½ cup Red Wine Vinegar
½ cup Brown Sugar
Render the bacon, strain excess oil. Add in the red onions to the rendered bacon, sauté until translucent. Deglaze with cognac. Add red wine vinegar. Add brown sugar. Simmer until paste consistency.
Building the Burger
Toasted Brioche Bun (toast in pan or grill with unsalted butter until light golden brown)
Bibb Lettuce
Sliced Local Tomato
