Caramelized Garlic Kauai Shrimp
Lemongrass Sweet Chili Sauce, Pohole Fern, Pickled Shaved Carrots, Fennel
Ingredients
Serves 2
Lemongrass Sweet Chili Sauce
2 tsp minced lemongrass
1 Tbsp. chopped cilantro
4 oz. sweet chili sauce
1 oz. soy sauce
½ oz. fish sauce
2 Tbsp. butter
Garnish
Pohole fern
Pickled shaves carrots
Fennel
Fried garlic
Heat pan very HOT
Marinate shrimp in lemongrass sweet chili sauce mixture
Add 1 Tbsp. butter to hot pan (pan should smoke like its burning)
Add marinated shrimp into pan
Let shrimp caramelize on both sides(shrimp should look like its burnt)
Add remaining 1 Tbsp. butter
Remove from heat, plate and garnish
